Egg and Bacon Rolls

Prepare and wrap several hours before cooking
Ingredients
10 round crisp bread rolls
10 spinach leaves, chopped
30g butter
2 onions, chopped
4 bacon rashers, diced
3 tblspns bbq sauce
10 eggs
1 cup grated cheddar cheese
Instructions
- Cut slice from top of bread rolls and reserve.
- Scoop out inside of bread rolls leaving a thin shell.
- Drop spinach into pan of boiling water, boil 1 minute; drain.
- Saute spinach in hot butter for 1 minute; drain, divide spinach between bread rolls.
- Saute onions and bacon in pan until tender, stir in barbecue sauce, spoon over spinach.
- Break eggs into each bread roll, top with cheese and replace “lids”.
- Wrap bread rolls in aluminium foil, stand on tray, bake in moderate oven 15 minutes.
- Remove from oven, stand 5 minutes before removing foil.
