It's ok to be a bit daring with the Rum
Ingredients
125 grams butter
1 cup icing sugar
1/2 cup cocoa
2 tblspns rum
1 1/2 cups coconut
few drops vanilla
2 cups chopped mixed fruit
chocolate dollarettes
Instructions
- Beat butter, sifted icing sugar and cocoa to a light cream adding a little rum (ha ha…) to moisten.
- Beat in remaining rum.
- Fold in coconut and vanilla.
- Blend in chopped fruit.
- Roll teaspoonfuls into balls. Coat with chocolate dollarettes.
- Place on waxed paper and chill until firm.
- Store in airtight tin in cool place.
