Beetroot and Fetta Salad

It's a favourite for taking to a bbq. Always gets well received.
Ingredients

Salad
4 MEDIUM BEETROOT (approx 650 grams)
250 grams fetta cheese chopped
1 cup (100 grams) walnuts
150 grams rocket

Dressing
1/3 cup olive oil.
1/4 cup lemon juice.
1 tablespoon white wine vinegar
3 teaspoons sugar
2 teaspoons ground cumin

Instructions
  1. Cook Beetroot in a pot of Boiling Water until tender.
  2. Drain and peel while warm.  Cut into bite size chunks.
  3. Combine rocket, beetroot and fetta in a bowl.
  4. Sprinkle with walnuts.
  5. Add dressing.

Dressing

  1. Combine all ingredients in a jar and shake well.

Variation

  1. Add cooked lentils and mint.  About 1/2 cup of each.
