Sometimes it's just easier to say yes to that extra piece of dessert because frankly it's exhausting to keep saying no.
Ingredients
250 gram butter
2/3 cup caster sugar
1/3 cup honey
1/3 cup cream
1/3 cup brandy
300 grams flaked almonds
150 grams unsalted shelled pistachios
100 grams dark or milk chocolate
Instructions
- Preheat the oven to 200 degrees
- Line the base and sides of a 19 x 29cm lamington tray and grease well
- In a large saucepan melt the butter, then add the sugar, brandy, cream and honey
- Stir and bring to the boil
- Remove from heat, add the nuts and mix well
- Spread the mixture into the prepared tin and bake for 25 minutes or until the top is golden brown (Place a dish in the bottom of the oven to catch any overflowing liquid when cooking)
- Remove and cool
- Melt the chocolate in a bowl over gently simmering water
- Drizzle over the slice and refrigerate
- Cut into squares or rectangles to serve
- Store in refrigerator
