Ingredients
375 grams zucchini
1 medium onion
3 rashers bacon
1 cup grated cheddar cheese
1 cup self raising flour
1/2 cup oil
5 eggs
salt and pepper
Instructions
- Grate unpeeled zucchini.
- Finely chop onion and bacon.
- Combine zucchini, onion and bacon with cheese, sifted flour, oil and lightly beaten eggs.
- Season with salt and pepper.
- Pour into well greased dish.
- Bake at 180c for 30-40 mins.
- Serve with tossed salad.
- Variation – Add chopped spinach and substitute 1/2 of cheese for ricotta or fetta.
